Fenris wolf has no special ability at all. He really just has the pure brawn to surpass any god. Apparently in Norse mythology you can brute force godhood.

Then again he comes right out of a myth where the other mythical wolves swallow the sun and the moon.

As for the resurrection... you're right. It comes down to how you want to read it - basically it just says Balder comes back and Loki doesn't, so there is some form of resurrection going on after Ragnarök. But the whole idea that everyone else too comes back is just interpretation, based around how everything is supposed to "go back to normal but slightly better".
It's really just Modi and Magni who survive the actual apocalypse. Can't remember how.

Yes, know the backround of it, just not sure why foxes came to be associated with tofu in the first place.

Folklore is full of odd associations like that. For example, in Sweden it was long held that hedgehogs love cheese (when in reality they can barely digest it).

It's a shame her only "playable" incarnation is as Yukari's environment friendly cruise missile. Which is not to say that isn't a well constructed game mechanic, just an odd place to put a character with a fairly big speaking role in the previous game.

Relevant - not significantly more than any other. The biggest difference would be that the fox is held to be intelligent, cunning, long-lived and to hold shifting agendas in a mythology where most creatures are rather straightforward, single-minded and not very bright. In a fictional setting, those traits would allow for a character with a lot of backround material - not necessarily related to the main plot.
So not saying foxes are any more relevant, just surprised the storytelling tools they allow aren't used more in the settings where they show up.

You make a good point - the Japanese probably aren't really anymore interested in their own mythology than anyone else is. I mean, there are tons of Swedish game studios, but I've yet to see a game featuring a huldra or a marine troll.
