As someone who isn't very good at the games,

MoF has the most lenient bomb system.

EoSD seems slower paced compared to the rest.

IN with like 9 starting lives.

PCB as Sakuya with homin' Knives.

Ten Desires as anyone.

So really just start with any one but SA or UFO I'd say, those will rape you raw. That said, choosing the ones with your favorites Touhous in it will probably be the best motivation.
