You can think that, no one's stopping you. As an old-school Saberfag myself, I simply like the idea of Artoria who ignores silly ideas like character flaws and turns into the faultless and perfect King. The kind of Artoria Gil won't smile at because his instinctual dislike for Gods will kick in.
She's not a character you can use in an actual story (unless you take her Lion King version, which doesn't have any humanity left, so there can be some conflict), but an interesting thought experiment.
