I am not seeing race where there isn't any. You could make a legitimate argument that people in fictional works set in fantasy worlds have no race as we know it, even if that world is based on European mythology or whatever, because the people of that world are not the same as the people of Earth. But people in fictional works set in Earth do have nationality and ethnic backgrounds and therefore race, be it fictional race or not. Let's take a look at a pic of eroge to keep it on topic. Mizuho - ethnically Japanese with black/dark brown hair. Seems fine even if the eyes are blue but let's ignore that for now. Luna - an albino Japanese! Makes sense for her to look the way she does. Ursule - Swiss! A variety of Caucasian. Blonde hair and blue eyes is a typical Caucasian stereotype and is commonly used to represent (white) foreigners since this phenotype is not found among Japanese. Then we come to Minato. Uhhh - why is her hair red? Well, she's Japanese, so I guess we just have to assume she dyes it. And wears color contacts like Mizuho, assuming this story is taking place within the context of a presumably real place on Earth. Whatever, that's fine I guess. But I think we can both agree that girls with red hair are much more common among Caucasians than Asians, yeah?

I don't really know why you're getting triggered over supposed racism. It's just common sense.
