Outside of cameo appearances she basically dropped off the earth. Honestly at some point it's not feasible to give every character a speaking role as time goes on since ZUN continuously adds more and more characters. Some get development sure, but the rest of them pop in for a few seconds during their stage, say a one liner, and are never seen again. It's very likely ZUN never planned more for many of these characters besides spellcards and their appearance. Some characters only appear in newer works because the mangaka remembered them and added them in as background scene filler. Koakuma for example appeared all the way back in EoSD and has a couple background cameos and a line about her from ZUN in SCoOW.

It's legit the easiest Extra stage that's ever been made. I had no fucking idea what was waiting for me and I finished it completely blind first try without putting much effort.
ZUN, what the fuck? Suwako, Mokou and Ran are a fucking hassle compared to it. Fix that shit with a damn patch.

No it wasn't you fuck. Houyi married her and killed her son long after the ten suns incident, long after his wife Chang'e took the elixir of immortality and ascended to the moon. Junko conspired with one of the ministers to unseat Houyi and kill him, and ever since she's borne a grudge against Chang'e, probably for being a dumb bitch who accidentally left her husband and turned him from a hero into a monster. But Junko actually forgot about all that in the long centuries of rage that followed, so it doesn't really matter.
