Because it's Miku Miku DANCE so it's natural to make dancing videos.
Also, there are usually shared motion data that they can just paste it on models, so it's easier to make.
That's why you see tons of Sweet Devil or Lamb dance videos.

Just be glad they do use it for something other than dance, though mostly it has crappy animation, but there are also good ones.
