I don't mean to be rude (and I don't know if I'm correct) but isn't what you're stating a bit late? It's been a couple years now GUMI's been 2nd most popular Vocaloid. If anything I'd say she's lost popularity compared to that huge popularly peak she got in 2012-2014(ish? I don't have stats at hand). Someone corrects me if I'm wrong though, I haven't checked new GUMI songs in a while, or even niconico at all in a while.

It is but it doesn't matter when you have pixiv artists pumping high quality fan arts. I don't even remember what half of her official arts look like because it doesn't matter.
As for why others anon said it best, her voice is great and versatile and fits all sorts of musical genres.
