Touhou is different than most series. If you're obsessed with "canon" than you'll be very disappointed. Characters have a few lines of dialogue in the game and that's it. There are a few other official publications but that's it.

Fanon ideas are more or less de facto canon among most fans; even the elitists who claim to care nothing but canon probably have plenty of assumptions that are actually from the fandom. The really unique thing about Touhou is the number and high quality of the fan production.

It's possible to just enjoy the game, but then it's just a 30-minute game. The nearly unrivaled amount of fan production, with a huge range that covers tons of music genres and manga types (everything from cute and moe to very serious, grim storylines), as well as literally hundreds of thousands of high-quality fan art, are what make Touhou unique. Honestly, it just depends on how much you get into it. One of the reasons I love it so much is because I have been reading so many works about the cast of characters for so long, in many different realities that they mean much more to me than characters from any other series. Also, the sheer love and dedication of the fandom also touches me.

Just try some doujin material and see. What genres do you like? This here, for example, is a serious take on a Touhou storyline.
