Well there's generic summoning that pulls any qualifying individual at random, but you could also summon a specific one of them if you know their magical signature. This is probably what you find in old forbidden tomes that have spells to summon notorious powerful demons and whatnot: summoning spells tuned to a specific entity.
In theory a human could arrange for such a spell to work on them as well... though you'd probably have to invent your own variation that works to summon humans instead of monsters, and then spread knowledge of the spell to monsters.

Probably big rivals, the two races have historically always been at odds wherever a distinction is made between the two.
Demons like orderly tactics and their contracts reflect that. Devils are immensely more straightforward and seem more unrestrained than demons (in the Ropu sabbath sense).
Demons probably see Devils as crude and impatient, while Devils see Demons as relatively stuffy and slow to act.

Y'know, since Devils and Demons can now both be Sabbath members I bet they'd butt heads pretty frequently.
Devils and Demons were always pretty fierce rivals in materials that make a distinction between the two.
