When it comes to romantic stories, I think Pigeon Blood has some of the best ones featuring Meiling and since there's so many of them I recommend reading every single one. I also recommend reading some of the older and newer VISIONNERZ stories like:

There are also a couple of good fight focused ones like Asatsuki Dou's Working at the SDM or [こおりあめ] 月に咲く華 散りゆく花 with the latter actually showing one aspect of Meiling's canon behavior, which is accepting martial arts challenges. Apart from all of those there are plenty other ones and it would probably take me the whole evening trying to explain what's good about them.
