They're only "fighting" the way pillow-fighting is "fighting". They feature girls throwing non-lethal projectiles at each other. It's implied that the winners occasionally do worse things (after winning), but for the most part the power is toned down to not kill anyone, and even the incidents are generally harmless in context, just annoying - at the level of a gensokyo-wide prank.
