I started a solo game of Old School Essentials where I play 2hus playing a TTRPG. It avoids moust of the problems you mentioned even if it is a little limited.
Some of OSE's rules like, race as class, is well suited for Touhou. I could see someone makeing a 2hu module. I think you would need to change how exp is given, flying and how magic works.
