Sure, it would be nice if she got a decent chance to shine in some actual canon material, but I'm not gonna cry about it and try to turn her into an entirely different person.

Not once has Sakuya ever been depicted assaulting Meiling with knives outside of the usual spellcard duels.

And yet artists will never stop using it for a gag because they're uncreative hacks.

Well that's because that's the wikia, which is a complete shithole and should not be regarded for any kind of information at all.

Meiling's job as the SDM's gateguard keeps her outside practically 24/7. Whatever little sleep she manages to get is from the short naps she takes by the gate, which just gets her mocked or punished. Though they often throw parties, she never gets to attend any of them as she either needs to take invitations or prevent anyone from interrupting them.

In current Gensokyo, it's also a largely pointless job. Most of its residents know better than to mess with the Vampires, or can just challenge Meiling to a Spellcard Duel and get in whether she wants them to or not. Or they can just sneak in, as Meiling does not seem to be particularly good at her job in the first place.
