Regarding Doom, I found out that you can change the midi soundfont the game uses. This means you can play with the Touhou and PC-98 sounds. Install VirtualMIDISynth and add in the soundfonts, you can only have one of them enabled at once I think, then change the midi device in your Doom sound options accordingly.
