There's also no talk of her being able to, say, fully transform into another kind of monster girl. Rather shoggoth are stated to be able to form "any kind of organ" as well as necessary tools. KC has also noted that what they make with their body is normally reabsorbed as soon as it is no longer in use (which further suggests they are limited by their body mass).

Here's the Shog profile--what makes her a no-go for you? She's a little Yandere, but I kinda like that aspect of her personality, and the implication that she will start replacing bits of your house with herself. A girl who loves you so much that she wants to become your world is pretty neat.

It is somewhat ambiguous, but most likely they do not usually simply end up doing nothing but having sex (assuming the general rules of the setting apply to them).
