I did not play the remake yet, but in the original, Shiki felt like a clean slate to me, I felt like he was a kind of self-insert protagonist when I played 10+ year ago, I read the game like he was me, there was something lacking in his personality. Shirou had more character and personality, I felt more detached from him, his love for the heroines, felt like I was watching a relationship from afar. At least this is my impression after years/decades from when I played those games.
