And ZUN is an omnipotent kind of "narrator", giving us specific facts about his characters, leaving stuff unsaid/not detailed on purpose. If he says Remilia is 5 years older than Flan, its true.
At least in the context of official profiles.

What he "makes" other character say (like Akyuu / Aya / Witnesses) its like you say, a source with lesser reliability, because the information is acquired on the same narrative level, and may (or not) serve for his plot directing purpose.

Personally, I support the theory that they were converted.
Not because a Touhou-based argument, but because classical vampire beliefs.
