I usually recommend between these 3 VNs depending on different things about the person asking:
1. Summer Pockets Reflection Blue - if you just want a classic VN by Key that's great for beginners.
2. Corpse Party - if you want a bit more gameplay elements, not something that's basically just a picture book with voice acting
3. Professor Layton - if you want something quite a bit easier and shorter, it also has Furigana (the downside being it has almost no voice acting)

However, I also tell people there's no such thing as a VN for absolute beginners. So if you haven't read through an easy manga like Yotsubato or Nagatoro yet I'd try that if these kick your ass
