I'm going to stop this thread and explain clearly how Kuzuki got the drop on Saber.

Saber was distracted by Caster. This is how Kuzuki managed to catch Excalibur.
Saber turned to focus on Kuzuki, and underestimates him.
Kuzuki employs a hidden technique, NOT JUST SOME MERE FEINT. His attacks that have been redirected (and therefore, ignored by Saber) turn around and strike again.
He lands a lucky blow.
Saber survives and analyzes this method of attack.
It promptly never works again, because now she knows not to ignore attacks that have been deflected.

Whether her reaction time is "supersonic" or not, when she parried Kuzuki's fists, she had no way of predicting (short of Instinct) that they were still a threat to her. Once she realized the threat, the attack became harmless to her immensely superior abilities.

I do not believe they were made faster. Strengthening only seems to make the item enchanted more powerful offensively and defensively, as well as gaining the 'magical' attribute.
