Pattern making is a little tedious and a trial and error sort of thing if you wanted to make it from scratch. It also takes skill to identify parts of a pattern and how things sew together.
The way I did mine is I put masking tape over parts of a gift plushie I already had and made a pattern from that. Even then I'm still perfecting the pattern. Pic related Yuka's original leg was too skinny and the newer one on the left is much bigger and more comparable to an actual fumo.
Keep in mind that materials do add up as well -- fabric (ex.1yd of minky for me is $14), stuffing, etc. -- so being able to snag an actual fumo during release would be 3,500 JPY without fee and taxes compared to scalper aftermarket prices.
Some tips though that I learned during my process: Keep your seam allowance small (I needed to use 1/8 in), stuff the plushie in small portions to keep the fluffing even, and mockup patterns are inevitable so make sure to use scrap fabric and not your final fabric or it might all go to waste!
It's nice to make your own soft though~ There really is a lot of love and passion going into it if you do decide to make one!
