Imagine if all touhou doujins followed canon. No artists would put in their own creative input, just following what was already written down by ZUN, a person that likes to rely on unreliable narrators when expanding his setting, all so that he himself can avoid being consistent and nailed down to one interpretation.
I think it's going to be boring. Most of my favourite doujin works either broke the canon (in zounose's When You Wish Upon a STAR Marisa's mother is dead) , or talked about something ZUN has refused to talk about (azmaya's Lost Girl - Lost Lady discusses how the protagonists have kept their youth).
As long as they did it in a clever way, I think it's okay to subvert canon every once in a while. Otherwise we would just have hundreds of doujins retelling the plot of EoSD... Besides, don't you think that interpretation of Banki was clever?
