I honestly prefer sad and/or bittersweet ends. Happy endings, are just a little too perfect, with an all too appropriate bow tied on everything. I personally just don't care for them.

Bittersweet ends are the best, there's some happiness in there, but just a twinge of regret/longing. I find it beautiful.

Sad ends just make me cry, OP. I loved Saber as much as the next shut-in otaku - but seriously? You threw up? Uhm. How about you stop reading FSN. When you get to Heaven's Feel, I don't know what you'll do. It wasn't even that bad of end, OP. The servants were never meant to stay past the Grail War. Shirou and Saber at least got to say goodbye to each other - they both had a good experience together - and everything that >>7989176 said.
