My personal favorite sci-fi reasoning for this one is that whatever mechanism changes their size also makes them more durable as they grow, and trades their strength for heat when they shrink, and all of this tradeoff is scaled with size.

This way, the shrunken won't freeze to death but they'll also be fragile as cake crumbs.

Meanwhile the giant's body basically becomes a super hot and impenetrable mountain that even bullets can't pierce, and she can probably melt people to death with her breath alone. This is also why she can move so quickly despite being so enormous, because her insides are a superheated mass of ultra-strong material.
Grow her to the size of a solar system and her skin and organs will basically be as hard as adamantium and her insides will be as hot as a supernova.
