Didn't she end up moving back to Gensokyo and enjoying her unplanned retirement?

Because people relate to fantasy through what they know. Everyone knows their own, normal life, so if you try very hard, most fantasy can be seen as an extension of your normal life.

So if you are a person with a little bit of imagination, but not a lot of experience, you might think "Wow, this fantasy scenario looks like a distortion of something more normal, and that's unusual!" You might also think "What would cause a distortion of normal life?". The way mental illness is portrayed in most of the western world appeals to these sorts of people (it's portrayed as taboo/edgy, that it somehow makes people special, that it is associated with extraordinary abilities), so "this fantasy scenario is a result of mental illness" is a result that's rather easy to come up with.

And then, of course, if you were the sort of person to come up with that idea, you might also be the sort of person to think that it's somehow original, and also be the sort of person who gets on the internet and posts your stupid theories all over social networks.
