There is indeed a trade-off, greater power in exchange for (usually) a bit more specialization. The limitations are detailed a bit more in the below quote:

But while they are usually prevented from using/learning spells with other elements, that doesn't mean an elementalist wouldn't be able to learn spells that don't have elemental attributes. All those would still be available to them in addition to the powerful spells their contracted elemental allows.

And of course there are exceptions (usually women) who can handle multiple elements, like Saphirette.
