It really depends on how it's bound. That being said, a poorly scanned copy is still preferable to no scans at all. If you aren't willing to tear it apart, you'll have to just open the book as wide as possible when scanning. This does, however, tend to miss the parts of the page closest to the spine. Depending on the size of the scanner and the book you may be able to do it two pages at a time, rather than one page at a time as in my image here. Two page scanning tends to get a bit more if the page that's close to the spine and with some help from a skilled shooper you can even manage a reasonable recreation of anything out of focus.

Of course, all that pales in comparison to a scan done with the pages removed from the binding and placed flat on the scanner.
