It's really your choice. I don't like sprite purism so just go with what you prefer. The PS3 sprites are more extensive than the originals and replicate the old expressions in their style, including the meme ones on Beatrice, Kinzo, and Erika. I'm not sure if Umineko Project gives you an option to switch because I didn't play it but it's a PS3 port so I doubt it. The Steam version includes the old sprites. Also, great taste, Maria is my favourite WTC.
