Meh, that doesn't sound like Eirin at all. You gotta be a little creative, anon, especially with a character like her who already teeters on the edge of sanity.
Really, if the good doctor ever found herself interested in a man, I imagine that plan would involve drugging and brainwashing him, letting him rampage across the village, and then convincing the villagers to put him into her care for "treatment", gaslighting the poor guy into thinking he's a monster and using his guilt to control him and keep him confined inside of Eientei.
I don't think she'd make him immortal, either. Death is only natural, after all. She might not even really be all that obsessed with him; perhaps this is just a momentary bit of fun along the course of eternity, just a little hobby for her during your lifetime.

There's a lot of stuff you can do with inhuman yandere girls, really. Just gotta consider the possibilities a little.
