Mountain of Faith is pretty fun, good music, good characters. I'm also fairly dreadful so the bombs being more available makes it a little more fun, although it does lead to shotgun bombing parts I'm bad at which really doesn't make you better at the game.

Subterranean Animism is probably my favorite characters/music/story wise, but it positively destroys my anus past stage 4.

Definitley.

Kanako's theme is the epitome (in Touhou at least in my opinion, at least) of both godliness and boss-ness.
