Anon, think. Do you have a garden? No? Did you ever see a private, well cared for garden that didn't have specifically prepared soil with every single blade of grass, root, or pebble removed? Do you realize that to flowers(or veggies), especially delicate ones, grass is about as harmful as weeds? It still has roots that compete over the nutrients in the soil. Wild flowers are their own thing. Yes, they are also beautiful, but they aren't cared for by a pro gardener.

I assume she doesn't do anything that consequential because she's been alive long enough to have just done everything she thinks is worth doing.
Think about it; Yuuka is one of the most powerful youkai there is, rivalling Yukari in terms of raw power. What's to say she hasn't had enough time to just *do* everything?
She likes fighting, so she's probably fought everyone already before getting bored and moving on to find something else to do, she's probably been everywhere she wants to go, she's intelligent and knowledgeable enough to suggest she's read lots of books (and understood them), the only thing left for her to do that she might take joy in is an eternal task that's totally impossible to actually complete, that being gardening.
She has a natural talent for it anyway, and she obviously likes it enough to want to do it, and therefore she quite possibly decided to just tend as big a garden as she wanted to in order to have something to do to take pride in.

Now, if a man were to show up that she'd take an interest in, she might have something even better to do, would she not??

Well, y'know, spoilers. That's going to be in the next one.
My interpretation is that she can get a rough sense of how a flower/plant whatever is doing just by looking at it, akin to how a seasoned professional would know if it was low in nitrogen/phosphorus/potassium etc. but with pretty much absolute clarity. Yuuka is something of an eccentric after all, so her interpreting that as the flower "talking" to her in a primitive kinda way. You can do something the same with a cat, but Yuuka can do it with flowers, and thinks it's obvious so she doesn't see why calling her unnatural ability "speaking" with the flowers isn't confusing, since in her mind they are, just on a very, very basic level.
