It's not debatable, we have objective confirmation that youkai only need belief to exist, and largely speaking from what we know most of the named characters don't eat humans. The human deaths in Gensokyo are easily forgotten outsiders to feed the handful of weaker and more belligerent youkai that either haven't been able to or haven't been willing to ween themselves off of human flesh.

If you want a serious explanation as to the why in-universe? The vast majority of the cast is just fairly shitty as people. 2/3 named Sages are Machiavellian at best and insecure, narcissistic control freaks at worst, and trying to change the status quo in a way that would allow humans and nonhumans to healthily coexist would threaten the power-balance between the factions like the Tengu, Moriya Shrine, Buddhists, etc. and nobody wants to go through the struggle to do anything like that.

I do think it can be interesting to see what's highly regarded and what isn't compared to what you enjoy, also using the genre stuff caa maybe be helpful in evaluating what critical opinions mean. Personally I love battle shounen, but if, for example, shounen gets more respect from media criticism people moekei yonkoma adaptations, then a series from the latter category being evaluated unusually high by those crowds could be indicative of something. It could mean it's popular for synthetic reddit type specimens to say it's revolutionary and subversive of the genre like Nichijou (not that Nichijou isn't great it just is used that way by those people for some reason) or it could just be really appealing in a certain way that it managed to win over people who don't usually take an interest in the genre. For example if you saw a reviewer who you know hates battle shounen like you praise a battle shounen series up and down it might indicate that it's worth giving a try..
Also Ghibli isn't really unanime, Miyazaki is just really insecure and pretentious but deep down he made what he made cause he wanted to depict cute little girls but can't admit to himself that that's really what it's all about for him
