This is a rather weak argument against the existence of Christians in Gensokyo. Contrary to (extremely) popular belief, it's possible to be Christian without denying the existence of other gods than Capital G. For example, Mormons have such a doctrine.
As for demons, if they are already in hell or powerless, then what do Christian exorcists even do? Not to mention, the concept of youkai doesn't seem to map 1:1 to the concept of demons. In this regard, also consider for instance how Islam has no issue combining monotheist faith with the existence of jinn.
Still, I find the idea of Reimu being Christian a bit weird. She does not strike me as having that characteristic "Christian recklessness" in exterminating youkai. By this I mean that she seems considerably less hardcore about it than, say, the Belmonts or Ciel.
But that's just my opinion.
