Yes, they could paint animals anatomically correct when this was made. But it was common to depict animals that had a connection with God more human-like, such as the front facing eyes and such. This is because it was seen as a sign of intellegence, and it was something more than just an animal. Same as painting children like small, older adults to show them as wiser.

And even if this was the best they could do, shouldnt the original still be preserved? You speak like you would want medival paintings painted over because they lacked perspective and were ""BEG""

I mean that’s kinda a foolish way of putting it. Where do you draw the line between lacking skill and intentional choice? It would be like overpainting Baroque art to the standards of Neoclassicism.
Even if it was early 15th century Northern painting containing primitive aspects of the Gothic period, what’s the point of changing it? Giotto had a very shitty sense of perspective, but should we completely fuck his frescos up because it’s not “correct” enough for today?
