how successful would I be tracing ai and fixing minor things like hands/eyes/etc and passing them off as my own?
I wouldn't use their gay overly detailed rendering style so it wouldn't stand out as obviously being ai.

Guys like CGCookie/vonnart use it to great effect as early ideas for their comps/palettes, but you still need some actual skills to pull it off, if there's no identity of your own it'll be forgettable slop
