There is /3/ for this stuff, but it's nice to occasionally have threads like this, this is still art, and a good application of art skills learned. It's just like pixel or textmode art, in my opinion anyway.
And for those wondering about what programs to try to get into low poly models, try Block Bench ( https://www.blockbench.net/ ) if Blender seems too complex to get into.
I was going to suggest PicoCAD as a nice starting point, but it's no longer free at all? Strange.
