it impacts which direction is gonna suck more when drawing because it's covered by your hand. Also probably which direction you can make longer and smoother lines in due to how your arm moves.

If you do digital it affects how you can use the keyboard/mouse and what keypads you can use.
If you use a Rhand mouse then there's less time between putting the stylus down to grab it for adjusting things (this can be fixed using a trackball or dexterity for rhanders though.)

Hotkeys for and such are more designed for rightys' offhanded use so you will need to remap them to the other side of the keyboard to avoid weird wrist issues

The thing that matters the most is that
1- You avoid developing carpal tunnel
2- You can change hands whenever you get tired with one. Having your "master hand" benched and making your sloppy one the first to go through the grind of a drawing makes you feel like having a second air
