Ryoko Kui fits the bill I think. She has a beautifully clean and refined art style yet she manages to make all of her characters look distinct with unique facial features, face shapes, body types, etc. She's incredible and I will shill her until the day I die

As someone into classic shonen and gritty sci-fi seinens, general 2000s AD and Metal Hurlant stuff is pretty cool. Tank Girl and Valerian seem interesting as well, tho I still have to check them out.

Humans are very complex and it all comes down to a number of factors.
First of all, people are attracted to humility, so a lot of readers would be turned off from anything trying too hard to be cool (unless they're the opposite sex and jus think they're hot).
On the opposite side of the coin you have characters that are too "adorkable" to the point of being annoying, eg relatable middle schoolers that watch anime JUST LIKE ME and openly reference internet culture. They'll often try to balance this with "realistic depression and trauma" but it always comes off as an eyerolling cringe fest that's way too on the nose.

Yu Yu Hakusho or My hero are good middle grounds, YHH leads more realistic but still with the more anime style and BNHA leans anime but with a western cartoon style.

On the right side this isn't as much a style as it is just simplified realism (Sure that's a style in itself but hopefully you know what I mean). IIRC from what little I have read of this cooking dungeon delving comic the characters the deviate the most from that are also the earliest like the Dwarf and the elf girl. And by extension the races that are not human.

Hunter X Hunter is togashi's toybox where he can do anything and write any story he wants at any given time.
The reason why the premise is so vague and non-specific is so that any cool ideas that come to mind can be written into the story.

Togashi is an example of a man who isn't cut out to be making long running shonen going out of his way to create a system that works for him. A lot of people think HxH is a very unique series as a result.
