Las Meninas is interesting because he painted it from his sitters perspective and also included the King and Queens servants etc which was probably unheard of at the time.

But I don't think it's the best Velazquez, I personally find pic related, his depiction of the crucifixion, to be particularly moving due to how solemn it is, and I'm not even Christian/Catholic.
It's just an example of perfectly execution of what painting should be all about: muted colors, a limited palette, a subject that is understandable and of service to the general public, aesthetic proportions and subtlety.
All these are reasons for why Las Meninas is great, and I can see why you think Velazquez painted 'the greatest painting ever'. Definitely a painter worthy of emulation.

I grew up in an ultra catholic country and this was one of the earliest image of Jesus I saw. Painted on a wall of the church in dimly lit area. Terrifying in a good way.

After a certain point in skill what becomes more difficult is to make something appear easy and effortless. Raphael draws attention from the art by having the perfect balance of finish and carelessness. This is what Baldassare Castiglione, the same person in the painting, calls sprezzatura, and is what people mean when they mention Raphael's grace.
Other artists, influenced by the idea that too close of a finish shows too much the artist's effort, may resort to bravura of brush strokes or turn to some idiosyncratic features, but this shows too much of the art in another way, and seems rather more self-conscious about the painting. As if they doubt their designs will not captivate through its spirit, which is probably true.
Art is not primarily meant for artists to examine closely the technique and various devices. Even worse when non-artists take part it. It can give a deeper understanding when someone who knows the art of painting examines more closely, yet should not appeal primarily to the artist or art student.
I would not say this particular work of Raphael is my favorite nor his best, but also think it could not have been done as effectively by anyone else other than the same painter who made the School of Athens. This point can be better illustrated by looking figure drawings, which still appear meaningful even in their isolation because the same artists had cultivated his judgment through pursuing more complete and grander subjects.
