I can draw sketches alright but when it comes time to add detail when inking the whole piece falls apart and everything ends up looking wonky.

I think it's a lack of knowledge of forms ands where to add the detail to make it look convincing. What are some ways that I can get better at this?

I suggest you keep practicing. Just keep doing small sketches and inking them. Also it would help if you try to learn shading I think, because that has helped me and others.
