You can go for digital painting too, it's just a different way to go about things. Painting would definitely help you get to a more organic look imo. Unless you actually want whatever this is.

try drawing from real life references of heads looking in different directions, you can tie in the some of those proportions back into anime characters

Your metaphor is poor. Your example is more, how would you even begin to study drawing if you were blind? And the answer is they wouldn't at least not unless they were zest with zeal. You can already draw just as you can remember what a bird looks like, you just need to do it more often.
