That's something you can use to your advantage to push a shape design that might not make sense physically (i.e. drawing the hair longer or shorter depending on the angle), but reads better and is more pleasant to the eye. The most fundamental rule you have to keep in mind is to use "CSI" lines. Watch Proko's introductory video about gesture where he explains this three types of lines

The banana peel / ribbon analogy is extremly helpfull. Start with big volumes and refine step by step.
This is how a sculptor would do, or if you were to do it with clay.
Watching zbrush videos or actual sculptors helps understanding the process aswell.
