They're water vapor, with volume, that have internal structure. They reflect light, or block it, or filter it. They have shadows, and reflection of hue. Big cumulus clouds like that tend to billow upwards, so that can be recreated in how you form the shapes. And, they usually have a flat base, that has more moisture, so they're darker and let through less light.

I'm studying photos to fix one of the errors you guys pointed out: how my hues don't vary nearly enough.
My way of doing this (block in colours with a hard round brush, then blend them with a blur tool) is very slow. Painting textures this way is just tedious. Is there a better, faster way to go about this? Or is it just a matter of practice?

There are many ways to skin a cat but I would suggest you work more from general to specific, simplify the shapes and values first before you get too noodly. A roughly correct general shape can easily be subdivided until you reach the desired level of detail. This image was made with the median filter in Photoshop btw, I find that it sometimes can be helpful to break down busy detail in the reference with filters and adjustments to give you an idea on how to simplify it.

Or landscapes in general, since they're fairly neglected here.

Depends on where you live. In the desert, and the plains, you get big cloud walls like that, because you can see them, there's no hills or mountains to get in the way, or trees. That's why Montana is called "big sky country". On the plains you can see the entire horizon, and see big fronts forming like that. You need lots of open room for that kind of formation, so in other parts of the world, the climate/geography might prevent it.
I live on the west coast, and we get clouds like that sometimes, they bunch up because the Sierras block storm systems coming off shore.
