How do I make drawing more enjoyable and fun? Because frankly at this point it just feels like an endless grind with diminishing returns

You draw what you want to draw. If that also isnt fun then drawing is the wrong hobby for you

Your fate as an ngmi was sealed the moment you fell for the loomis meme. You had the chance of enjoying drawing as a fun hobby, but you blew it all. It will no longer be fun for you anymore, no matter what you do. You cannot enjoy art in your life from that point on, and there is nothing you can do about it. You have lost one of the most fun hobby a human being could have in their life. The rest of us here will continue drawing cute anime girls while enjoying both the process and the result thoroughly, we will all laugh together in our jolly moments. Perhaps we will be laughing at you.

If you can't find any enjoyment in it stop fucking doing it, you're wasting everyone's time. Find a hobby you can actually enjoy and stop wallowing in self-pity/misery

Stop being full of yourself and accept your skill level. Draw good images with good shapes and good composition at your level. If you have no clue where that is, then start at a stick figure and work up to a level where you start losing confidence. Draw there until you feel confidant, then explore outward slowly from there.

You wouldn't run a marathon with a month of training, but you also probably wouldn't consider a 5 minute jog all that interesting anymore either. Don't work above or below your skill level, that's how shit gets discouraging or boring.
