Yes, but keep in mind that you'll be missing out on something.
The challenge was originally created to practice ink work/ to commit to drawing. That said, finishing an illustration every day is a great exercise in itself, and working with a prompt list can teach you to work with limitations and come up with design solutions. I would still recommend ink for the same reason most of /ic/ recommends to practice drawing traditionally first.

Well, you can but the spirit of Inktober is improvement, Jake Parker created Inktober as a way for him to learn to use the pocket brush.
I'd suggest you try learning a new technique but then, drawing something with a familiar pen is better than drawing nothing at all.

Study real aircraft. Figure out what their structure is and why they look like they do. There's a very specific placement of structural, lift and thrust elements, along with storage, fuel, electronics, powerplant etc. Designing believable aircraft is pretty hard: drawing existing ones from reference is not so IMO.
