There's whites (european, semitic), african, south asian, east asian, and a few aboriginal races (island, aussie, the americas).
These are distinguished not by culture or nationality or religion, but by observable physical distinctions. Which features vary from person to person are also different depending on race (which explains the "they all look alike" phenomenon).
The dividing lines aren't that granular. Slavs and swedes and swiss are the same race as jews and greeks and spaniards. An african american is the same race as a nigerian or a somali or a jamaican.

Southern Italians, some Greeks, and Spaniards of moorish ancestry have darker skin, yes. But that doesn't make them belong to any non-cacuasian group. So they can only be caucasian. With slavs I don't know how the fuck anyone can explain them not being caucasian.

Latino or latina is short for latin american. Race in latin america is a tricky thing because there's so much mixture. In countries like Argentina and Uruguay there's a strong european influence, in Brazil you got europeans, native indians, blacks and even japanese and sometimes these are mixed. In the US it's just easier to put everyone under hispanic/latino.

is it really? most papers already have the terms "native american" and "mixed race". indigenous people are native american, and mestizo/mulattos are mixed race. the whites are whites, the blacks are blacks, and the asians are asians. just let them choose that instead of an umbrella term that doesn't actually tell you anything about race.
