What do you guys think about the bean method? Is it just something for newbies to practice with and should be moved on from asap, or is it a legitimate method for creating some good shit?

AFAIK you're supposed to draw it until internalized - meaning till you start incorporating it in bodies and stuff without thinking too much

It is actually helpful though, I recently had a revelation with it because I kept screwing up and making silhouettes that didn't mesh well with the line of action and I realized that the side that is extended should just be a simple curve and the compressed side should have a sharp intersection. It mostly applies to side views though.

I dont get why figure drawing teachers teach the torso and the head first; probably the two most difficult parts of the body to render well, instead of something more basic like the arm and legs.

What's not to get there? It's purely logical that you'd start with the most important major masses of the body and don't just learn a bunch of useless anatomy one chunk at a time.
