As an atheist, I am also not a fan of mainstream cultural Christianity. You should try reading the contemplatives like St. John of the Cross, Thomas Merton, or Meister Eckhart. Stuff like The Cloud of Unknowing and Imitation of Christ are also pretty great.

Off-topic religious discussion aside, I agree that a huge chunk of history's great art has been inspired by (or commissioned by) Christianity.

It's widely agreed that Jesus (Yeshu) was an actual Mediterranean Jewish peasant who preached around Judea and was executed by Rome. It doesn't matter if you agree with the scholarly consensus or what you believe about the guy beyond that, this thread is about the art that Christianity inspired, not about Jesus himself.

You really can't find meaning in the crucifixion? Pretty straight-forward embodiment of Jesus's message of love and peaceful nonresistance: A man is nailed to a cross by centurions, and rather than despise them, or pity them or himself, he feels compassion for them because their hearts are sunk in hate. Practicing unrestrained love even to those who dealt him an agonizing death, it's really a beautiful idea, regardless of your religious convictions. And I'm sure that beauty is a big part of why it is so often immortalized in paint.
