They do make grey paper though. I actually have to buy some soon for an assignment in art school. It is definitely worth it to try out. Since the paper is the midtone, you work out in both directions, rather than starting with the lightest value and darkening.

As for digital, I think even with just line it can help to tone the background just a bit. The screen is its own light source, even white paper is just reflecting light and is not as white. It can mess with your perception of value.

I wear glasses and intense light like from a pure white screen makes whatever imperfections, scuffs or particles on the lens that your eyesight normally ignores suddenly visible and it's very bothersome.
I keep my glasses clean almost compulsively but even if they do get dirty your brain just becomes accustomed to it and ignores it like it does your nose and I don't exactly understand why but artificial light can just... disable that and suddenly you're aware of every speck of dust in your vision.
