OP the answer is to draw forms instead of shapes. Stop trying to trace out the correct line in the correct spot. You need to draw a line that wraps around the form, but not completely. If you look at the left girls chin, you'll see that the lines represent shadow just as much as the border of her jaw. the hair is mostly represented as a mass and bounch of shadows, with the lack of light being strands. The other girls hair is a mess of curves meant to show depth, you can't just trace over the curves the same way he did.

To learn how to do this, start with a drawing of a head you normally do, and then try to recreate it by eyeballing it and drawing thin and thick lines where intersections meet. Darker areas and areas underneath something can be scribbled in as a shadow.
