Most don't go about it like this, relevant portfolio is still the best way to get a gig in the industry, like in your example with Glen Keane x Yoji Shinkawa. It's just that you'll have a hard time to find a pro with Pokemon in their portfolio unless they're primarily focusing on mobile games, which isn't my case, but since I have the art skills in a certain level, they gave me a chance.
I'm not the only candidate tho and it's possible that someone with a more relevant portfolio showed up but their skills isn't that high, think Deviantart tier instead of Artstation like me.
The job is basically "what if Pokemon but even more furry" the mobile game and my art is closer to Assassin Creed... I'm screwed.

Just follow the course, if the video has an information you already know/ have some good understanding about and can do it with relative ease (be honest with yourself here), skip it. If it's a new spin on the subject or anything new that might be useful to something in your work, watch and study it wholeheartedly.
It's not a difficult thing to do too, generally just watch the first 10 min and you will already know more or less the direction the entire video will take, and if you want to be double sure, skip to different parts of the video until you see or hear something weird you never seen before on the subject, and then jugde by yourself if you'll use it.
